You cannot hear the word "chia" without singing the catchy ad song for the " Chia Pet". You will now have " ch, ch, ch. chia" buzzing around in your head for the rest of the day.
This little seed is a nutritional powerhouse. If you hate the fishy overtone of flax seeds then switch to these to get your daily dose of omegas.
Chia seeds seem to be devoid of any flavor so you can choose what they taste like by your additions. They also do not need grinding like flax seeds to access all the nutrients.
When liquid is added to chia seeds they form a gel layer around the seeds. This gel layer makes them a perfect thickener for smoothies and puddings. They can be used whole or ground up. If you do not like the tapioca like appearance of the pudding then grind up the seeds before adding to the liquid.
As if those benefits were not enough, with 11 grams of fiber per ounce they will keep everything moving smoothly.
Unlike many recipes, chia pudding is ridiculously simple. It is so simple that there is barely any need for a recipe. You will need chia seeds, your favorite milk and sweetener.
I use coconut milk and stevia. Almond milk or cashew milk are my other favorites.
6 TABLESPOONS OF CHIA SEEDS
2 CUPS OF ALMOND MILK OR CASHEW OR COCONUT MILK.
YOUR FAVORITE SWEETENER. ( THE AMOUNT WILL VARY DEPENDING ON YOUR TASTE. )
PLACE SEEDS AND MILK IN A CONTAINER WITH A LID. A MASON JAR WORKS PERFECTLY. CLOSE LID AND SHAKE EVERY FEW MINUTES. IF YOU DO NOT DO THIS THE SEEDS WILL CLUMP AND YOU WILL GET A BIG LUMP OF GEL. WHEN THE SEEDS HAVE EXPANDED AND ARE NOT CLUMPING YOU CAN STOP AGITATING THE JAR. EVERY FEW MINUTES FOR ABOUT TEN MINUTES SHOULD WORK.
PUT THE JAR IN THE FRIDGE AND WHEN YOU ARE READY TO EAT IT, ADD IN ADDITIONS TO TASTE.
